Keto Cheddar Biscuits

One of my essential recipes for Keto are these to die for Keto Cheddar Biscuits by Christy Denney. They are reminiscent of those tasty Red Lobster biscuits, but they are Keto friendly and will be the hit of your potluck!

Prep Time: 5 minutes

Bake Time: 15 minutes


Calories: 174

Fat: 15g

Carb: 3g

Fiber: 1g

Protein: 7g


Ingredients:

2 large eggs

2 tablespoons cottage cheese (sour cream can be substituted, however I used both methods and prefer the cottage cheese b/c in my opinion I think it keeps them airy)

2 tablespoons butter, melted

1 cup almond flour

1/2 teaspoon baking powder

1/4 teaspoon pink Himalayan salt or sea salt

1 cup freshly shredded cheddar cheese


Butter Glaze:

2 tablespoons butter, melted

1/2 teaspoon garlic powder

1/8 teaspoon sea salt

1/2 teaspoon dried parsley (may substitute crushed red pepper flakes)


Instructions:

  1. Preheat oven or air fryer to 400 degrees & line a baking sheet with parchment paper.

  2. For Biscuits: In a medium bowl, whisk together the eggs, cottage cheese & butter. Set aside.

  3. In separate bowl, whisk together the almond flour, baking powder & salt. Add dry mixture to wet ingredients & stir to combine. Mixture will be wet. Stir in the shredded cheddar.

  4. Drop batter into dollops onto the prepared baking pan, about 3 tablespoons each.

  5. Bake for 12-14 minutes or until biscuits turn golden brown.

  6. Butter Glaze: In a small bowl, add the butter& stir in the garlic powder, parsley/crushed red pepper and salt. Brush onto biscuits.
